What is wine?

It is difficult, perhaps even impossible to find a person who does not know what wine is. Even those people who never drank it will surely tell you that wine is an alcoholic drink that is made from grapes. This statement, of course, is true, but it is only partly true.

Wine can only be called an alcoholic drink fortress from 9 to 22% of turns obtained from grape or fruit wort (juice) as a result of its alcoholic fermentation (complete or interrupted).

Wine composition

  • The chemical composition of wine is very complex, it includes about six hundred organic and inorganic compounds.
  • The main component of any wine is water. Its percentage in wine depends on its grade and can be from 60 to 85%.
  • The second most important and mass fraction component of wine is ethyl alcohol, its content in wine is in the range from 9 to 22% by volume.
  • In third place are the sugars, mainly represented by glucose and fructose. The amount of sugar in wine depends on its grade.Thus, there is no sugar at all in the Brut Cuvée champagne, and as many as 300 grams of sugar can be contained in one liter of some liqueur wines.
  • Another important component of all wines is various organic acids, such as tartaric, malic, succinic, and lactic.
  • In addition to the above main components, the wine contains: glycerin, phenolic compounds (catechins and anthocyanins), aldehydes and acetates.

What are the wines: species

As mentioned above, the wines are grape and fruit and berry. The most famous fruit and berry wines are the famous Chinese plum wine made from green plum fruits, traditional Japanese honey wines made from apricots, medlar, peach or white plum Ume, and European (mostly French) wines - apple cider and perry made from pears.

The classification of grape wines is very difficult, therefore we will list only the basic parameters by which grape wines are classified. All wines made from grapes are divided into two large groups - sparkling (also sparkling) and still. The color of the wine is divided into red, pink and white. Depending on the composition of grape must, wine is divided into blended and varietal, depending on the time of their aging - ordinary, vintage and collection.According to the content of ethyl alcohol and sugar, wine is divided into table and fortified. Table wines are dry, semi-dry and semi-sweet, fortified wines are divided into strong and sweet wines.
